Jolada Rotti - Jowar Roti

Jolada rotti or rotis made of jowar flour is a famous staple of northern Karnataka and parts of Maharashtra. In northern parts of Karnataka, it is typically served with spicy side dishes, the most famous being Ennegai - a spicy curry of stuffed eggplants, and a dollop of butter.

Here in Bangalore, we get the best jolada rotti in Kamat chain of hotels, where they have unlimited meals - Jolada rotti oota. The waiters keep serving you hot rotis one after the other, served along with many mouth watering side dishes, including the famous ennegai and you keep on hogging one after the other! In some of the outlets, they also have live Carnatic music played softly alongside, making the food even more pleasurable.
Traditionally, jolada rotti is rolled by patting the dough with just fingers/palm, without using rolling pin, turning the roti in a circular motion, thus increasing the size and making thinner. Yes, it does require special skills for that and is labor intensive - at least, we, with little experience in that feel so! So we adopt an easier, method for making these rotis, using a rolling pin, just as we roll parathas/chapathis. It does come out equally good with lesser effort!

Here's how we make it...

Makes : 8-10

Ingredients:
Jowar flour - 2 cups + for dusting
Water - 3 cups
Salt - ½ tsp, or as per taste
Cooking Oil - 2 tsp

Method:• In a heavy bottomed pan, boil water by adding salt and a few drops of oil
• Once water starts boiling, add jowar flour and let it remain for 3-4 minutes on medium low flame
• At the end of 3-4 minutes, take off from heat and using a strong ladle continuously stir, avoiding lumps
• The resulting dough should be similar to that of papad dough - soft, but non sticky
• When slightly cool to handle, divide the dough into 3-4 parts and knead it well, smearing a few drops of oil. See tips and tricks below for easier ways.
• Once the dough is kneaded well into a soft but firm dough, take big lime sized balls and roll it using rolling pin like a chapatti/roti. Use a little amount of jowar flour
• You can roll all the rotis and stack then one on top of the other. It doesn't stick to each other
• Heat a griddle on high flame and put one roti at a time. After a few seconds, brush the top of the roti with some water using a pastry brush or clean cotton cloth dipped in water. This avoids the rotis from becoming too dry
• Flip it and repeat for the other side
• Cook it till small light brownish spots appear.
• Repeat the same with rest of the dough
• Serve hot with some butter or ghee and a spicy curry, preferably Ennegai (A stuffed eggplant curry)

Notes:
• To avoid your palms getting burnt while kneading the hot dough, fill it in thick polythene and cover it in a towel / thick cloth and knead it over it. This way a smooth and soft dough will be ready in a jiffy
• It is easy to knead the dough when hot rather than juggling it when it gets colder
• Knead it, make into balls before you start rolling. This saves time and effort, and it gets easier to roll and then cook simultaneously
• The better you knead, the easier it is to roll. If the dough is not kneaded well, while rolling the rottis start cracking and gets difficult to handle
• While rolling, if the edges crack, smoothen the edges with finger tips and continue rolling to get smoother edges

Ennegai - Stuffed Eggplant Curry

Ennegai - Stuffed Eggplant Curry

This, as I said, is a 'made in heaven' combination for Jolada rotti. Nothing else tastes as good as this with Jolada rotti or vice versa. Being one of my FIL's many favorites, this gets done on some special occasions, exclusively for him :)!

Little tender purple eggplants, slit and stuffed with a spicy peanut based paste, cooked slowly to tender in a heavy bottomed pan, letting the eggplants absorb all the flavors from the masala... Tastes awesome-est with Jolada rotti. Also good with chapathis/rotis.

It does take some time to make these, but not too much either. Just a little extra time, than your routine cooking and you'll be ready with mouth watering, king of gravies! Slow cooking of eggplants gives an extra good taste and texture to the eggplants. However, if you're pressed for time and still want to have this, then the pressure cooker also does help! Of course you should take extra care not to make the eggplants too mushy-mushy, but otherwise, you end up with an amazing gravy.

Preparation time : 20 min
Cooking time : 20-30 min
Serves : 5-6

Ingredients:
Eggplants - 15-18 small ones, preferably purple ones
Onions - 1 medium sized, chopped
Garlic - 3-4 flakes, optional
Cooking oil - 2-3 Tbsp

For the Masala stuffing:
Dry red chilies - 12-15, (I use a mix of Byadagi and Guntur varieties for color and heat)
Peanuts - 2 Tbsp
Chana dal - 2 tsp
Urad dal - 2 tsp
Grated coconut - 1/3 - ½ cup
Coriander seeds - ½ tsp
Onions - 2 medium sized, chopped roughly
Salt - 1½ tsp or as per taste

Method:
• Wash the eggplant and pat dry
• Slit them one by one in a + mark - starting from the tip to ¾ the length, keeping the stem as it is
• Heat 1 tsp of oil in a pan and roast the dry red chilies, peanuts, dals and coriander seeds
• Once almost done, add onions and sauté till golden brown
• Cool it, add to it coconut and salt and grind to a thick paste, adding very little water, only to facilitate the blades
• Stuff the slit eggplants with this ground masala, filling each with about a table spoon of the paste and keep in a plate. Reserve the remaining masala for later use
• Heat the remaining oil in a another wide, thick bottomed pan - preferably non stick or a cooker
• Add the chopped onion, garlic, and sauté till golden brown
• Place the stuffed eggplants one beside the other, with the stem up, arranging in a single layer
• Cover and cook on medium heat for 10-15 minutes, turning over the eggplants in between, till they are cooked tender
• Make sure the bottom doesn't brown, by keeping the flame medium to low
• Add the remaining masala and adjust the consistency with sufficient water. The gravy thickens as it cools
• Taste for salt and heat and add more if required. If u need more heat, add some red chili powder at this time
• Cover and cook till the gravy begins to boil. Stir it occasionally, but very very gently so that the eggplants are intact
• Switch off the flame and serve it with Jolada rotti and enjoy. It's a nice combination with usual chapathis / rice too.

Notes:
• This dish takes patience and time - the slower the eggplants cook the better the final dish is.
• Be very gentle when stirring
• Using no stick pan helps in reducing the quantity f oil used
• If you're in a hurry, you can cook the whole mixture in a pressure pan for less than a whistle; but you need to be extremely cautious with the time, else you'll end up with mushy eggplants
• Pick up little and tender eggplants
• Can also stuff and add capsicums along with eggplants

Badam Puri - A layered, soft-yet-crispy sweet


At lunch table, when we were discussing about what sweet dish to prepare for Deepavali, someone suggested Badam Puri. And immediately the memories of my first birthday after marriage came up. MIL had prepared a very tasty meal of Peas Pulav and Badam Puris for me. I had happily hogged all that I could.

I remembered that and decided that Badam Puri would be the sweet for one of the days of Deepavali. I just couldn't resist my temptation to have those slightly crisp, golden colored, sugar coated melting sweet, but I had no choice but to wait till the festival. This sweet is generally made in weddings, but I bet home-made version cannot just beat the taste and is also healthier, mainly because we use ghee at home instead of vanaspathi (dalda).
I learnt making it from my MIL, and it did come out very well.
Here's the recipe...
Badam Puri

Preparation time : 20 min
Cooking time : 20-25 min
Makes : ~20

Ingredients:
All Purpose Flour (Maida) – 2 Cups
Ghee – 1 ½ Tbsp
Baking Powder – ½ teaspoon, optional
Food color – 1 pinch/drop, preferably saffron or yellow
Salt – a small pinch
Cooking oil for deep frying
Water

For Sugar Syrup:
Sugar – 1 Cup
Water 1 Cup

Method:
Dough:
• In a bowl, add ghee, baking powder, salt and food color and beat it for 5-10 minutes continuously with your fingers
• Once the ghee forms a very smooth paste, add flour and mix thoroughly
• Add a little water and form a soft dough, neither too tight nor too loose
• Knead the dough for at least 8-10 minutes ensuring there are no cracks in it
Sugar Syrup:
• Meanwhile in another vessel mix water and sugar and boil it
• Food essence may be optionally added for enhanced aroma
• A pinch of color can be added as well for attractive color
Badam Puris:
• Now make small TT-ball sized balls out of the dough
• Roll out puris of about 4" diameter
• Fold it first into half and then again, making it 4 layered
• Slightly press it, using the rolling pin so that the layers are held closely
• Heat oil in a frying pan and fry these rolled and folded puris one by one in medium low flame till golden brown. The puris puff up and increase in size when fried.
• Drain excess oil by spreading it on a kitchen towel / tissue
• Drop the puris one by one as they are fried into the sugar syrup prepared
• After 5-6 minutes take out the sugar soaked puris from the syrup, in the order that they were dipped, and spread them out on a dry plate.
• The coated syrup is absorbed and the Badam-puris become dry in sometime
Serve it immediately when still hot or after cooling

Tips n Tricks:
• Knead the dough enough to get a uniform texture
• The sugar syrup should be thicker than that for Gulab Jamuns, so that the puris do retain crispiness, yet absorb the sweetness
• Do not wait for too long after the syrup is made, as the syrup starts solidifying when cooled

Banana Chocolate Cake - Vegan and low fat

I don't seem to tire with banana based bakes! For one, it is quite easy to prepare with no hassles and another, bananas are generally in plenty at home, and very often, it ends up unconsumed and over ripe. The best way to use it up would be to bake something with it!


And when there are so many different varieties of bakes with it, I tend to use a different recipe every time. And the main source for my bakes would be Champa's Versatile Kitchen. She too doesn't seem to tire with variations in banana cakes and breads and muffins :)

So this one was baked in between a very hectic schedule, just to use up some over ripe bananas. I baked it in two mini loaf pans and took one of them for a gathering. The phone in the pic below shows Champa's blog on it - that's how I refer to recipes while baking!

So, here's the recipe…
Banana Chocolate Cake - Vegan

Preparation time : 10 min
Baking time : 45-50 min

Ingredients:
All purpose flour - 2 cups (I used 1 cup whole wheat and 1 cup APF)
Sugar - 1 cup; don't skimp on this; I did and mine was a little less sweet
Baking Soda - 1 ½ tsp
Salt - ½ tsp; I used only a pinch
Cocoa powder - 2/3 cup
Vegetable oil - ½ cup
Warm water - 1 ½ cups (I used ½ cup thick coffee decoction + 1 cup water for a more chocolate flavor)
Vanilla - 2 tsp
Banana puree - 1 cup (I used 7-8 of those tiny ones - elakki variety)


Method:
• Preheat the oven to 350 F
• Spray 2 loaf pans of size 8 X 4
• In a bowl, whisk together flour, baking soda, salt, cocoa. Set aside.
• In another bowl, whisk together oil, water or coffee, banana puree, vanilla and sugar till well mixed.
• Dump the dry ingredients to wet and whisk to combine without over mixing. Be gentle and stir or fold if needed.
• Pour into the prepared pan and bake for 45 - 50 minutes or until a toothpick inserted in the center comes out clean.
• Cool in the pan for 10 minutes and then turn on to the wire rack to cool completely.
• Champa says you could dust with powdered sugar or pour a simple glaze, but I left it as is.


Ugadi - Hosa varsha, Hosa harsha

On every Ugadi, we'd wake up to this same old song of Black 'n white movie era. The same song would be played on both the radio stations – Akashavani and Vividha Bharati and the only TV channel, Doordarshan. And even now, when there are over a hundred television channels, almost every Kannada channel would play this song. The song translates close to this - "Year after year is passing by, and a fresh new year is beginning, bringing new joys, and everything new…"
Well, Ugadi is considered to be the beginning of a year according to Lunar calendar. It is the first day of the month 'Chaitra'. It is when the trees have just started sprouting with fresh green leaves, after fall, the mango trees are full of fresh leaves, and flowers beginning to grow into fruits. Fresh Green everywhere is a small ounce of relief to the scorching summer heat.
Ugadi, or Yugadi, as it is called in Kannada, starts with the task of cleaning of the house from a couple of weeks before. It is rather weekends for working people like us! The entire house is cleaned, dusted, curtains, cushions washed, all utensils and boxes in kitchen washed and refilled, so on and so forth.

The previous evening, mango and neem leaves are tied to the main door frame – what we call 'torana'. This gives the house a festive look. Yugadi starts with wishing each other a happy new year and then an elaborate oil bath – 'abhyanjana'. Then starts the pooja and meanwhile preparation of sweets and naivedya in kitchen. The main highlight of this festival is 'bevu-bella' – neem and jaggery combination – which signifies the sweet and bitter situations of life, which we need to accept with the same spirit.

Then comes the much awaited panchanga shravana – reading out from the new lunar calendar about the astrological significance of the new year, predictions of all zodiac signs for the coming year, which we believe or not, would want to hear, and speculate!

Then begins the feast – the sumptuous lunch that is prepared, and served on plantain leaves. The menu mainly consists of Mavinakai (raw mango) chitranna, or puliyogare, Bele obbattu, obbattina saru, payasa, bajji/bonda, salads, and curries (Recipes will follow eventually). All these are served on plantain leaves in a certain order.
A short nap after a heavy lunch and then getting decked up with new clothes in the evening. And a visit to the nearby temple. Also, they say it is auspicious to watch the rising moon on Ugadi. Since it is the first day after new moon day, the moon appears as a growing arc. There are some places where inflation/deflationfor the year, whether cost of commodities rise or fall, are predicted based on the orientation of the moon! And thus begins a new year….

Note: The scientific explanation to having neem on this day is this. Ugadi marks the onset of summer season, when lot of epidemic diseases outbreak. Neem, as it is a natural antibiotic, gives us resistance to these diseases to a certain extent. Since it is too biter to be had as is, it is mixed with jaggery.


Bele Obbattu

This used to be my favorite sweet. Usually, the standard Ugadi menu includes mainly Bele Obbattu and mavinkai chitranna. But since my birthday comes about a month after Ugadi, mom used to make it for my birthday for me, rather than for Ugadi....

My liking towards this special sweet was so famous that our next door aunty would not miss sending me a couple of obbattu whenever she made them. And my friends would invite me home when their moms would prepare them. I'd shamelessly go to their place and hog and come back!
Of course this still is my favorite.... the lunch caterer at office gets very soft obbattu almost every Friday and I make it a point to have it at least one Friday a month....
Actually these pics were taken last year on Ugadi, but somehow I had not posted them. Another Ugadi went by and my long pending post of Bele Obbattu is finally out.... Anyways, better late than never.... BTW, wish you all a Happy New Year...
Bele Obbattu

Preparation time : 20 min
Cooking time : 30 + 30 min
Makes : 20 - 25

Ingredients:
For the Dough (kanaka):
Chiroti rava / Fine suji - 3/4 th cup
Maida/ All purpose flour - 1 cup
Oil - 1/2 cup
Water

For the Filling (Hoorna):
Tur dal - ¾th cup
Channa dal - 1 cup
Jaggery - 3 medium sized blocks / roughly 1¼th cup when powdered coarsely; adjust as per you sweet taste
Cardamom - 3-4

Other ingredientsOil for brushing

Method:
For the Dough (kanaka):
• Mix sooji and maida well in a wide basin
• Add water and make a soft dough
• Mix in oil and knead well.
• Cover it and set aside for at least an hour

For the Filling (Hoorna):
• Wash and cook dal in a heavy bottomed vessel for about 15 minutes till cooked soft. Do not use pressure cooker as it gets mushy too soon.
• Drain off the water. This water can be used to prepare rasam, which we call obbattina saru.
• In the same heavy bottomed pan, start sautéing the cooked dal
• Add jaggery and crushed cardamom. When jaggery melts, the mixture becomes a little watery
• Continuously sauté it for at least 15-20 minutes on medium/low flame till the mixture is almost dry. Take care not to let the mixture stick to the bottom of the pan.
• Allow it to cool slightly; when warm, grind it to a smooth lump in a mixie or grinder. If you're using mixie, grind it in small batches as the lump gets stuck in the jar if more quantity is used at once. Keep aside to cool completely.
• You should get an almost dry, but with good binding consistency

Making Obbattu:• After about an hour, the oil would be separated from the dough; Knead it again for at least 10 minutes, till the oil is absorbed
• Grease your palms with oil, take marble sized ball and flatten it on your palm, leaving it a little thicker in the middle than on sides
• Place a bigger ball (lemon sized) of the filling in the middle and cover it completely, by stretching the dough. The quantity of filling should be almost double that of the dough to get soft obbattu.
• Grease a thick polythene film or a plantain leaf with oil and pat the stuffed dough slightly
• Take another thinner polythene sheet and spread it over the stuffed dough
• With your palm, smear over the second sheet applying gentle pressure, flattening the dough. Do it gently seeing to it that the filling does not come out. Make circular motion ensuring it is flattened evenly.
• Heat a thick griddle and brush a little oil
• Remove the second plastic sheet and Place the thick sheet with patted dough facing over the hot griddle.
• After a few seconds, remove the sheet, leaving the obbattu on the griddle
• Lower the flame and turn around the obbattu. Cook till golden spots appear on either side. Be sure to handle it with care, as these are quite delicate
• Take it out from the griddle and cool it slightly if storing. Else serve it hot with a dollop of ghee.
• Repeat for the rest of the obbattu.

Tips n Tricks:
• Do not overcook the dal
• Sauté it till dry, else it will not be possible to get the right consistency

Variations:
• Dough can be made fully of maida instead of adding sooji
